As of October 2025, this is the only restaurant in the US to which we directly export this prized wagyu. We highly recommend it.

An integrated meat production system, rare even in Japan.

We are a corporate group with one of Japan's few fully integrated meat production systems. Our operations encompass six farms for beef cattle breeding and fattening, a primary processing plant for carcass boning, a secondary processing plant for portion meat slicing, and directly managed retail stores.

Diversity

Traditionally, when people thought of Kuroge Wagyu, they pictured marbling. While that certainly delivered a "tender and delicious" eating experience to consumers, the truth is, the deliciousness of beef extends far beyond just that.

We are by no means denying the quality of Kuroge Wagyu's beautifully marbled meat. In fact, some of our Zao Wagyu even achieve the top "A5" meat grading. However, it's also true that marbled meat has, in recent years, been somewhat avoided by consumers. No matter how highly graded, a flavor that quickly becomes tiresome cannot be a long-lasting attraction.

Our exclusive distribution system handles all processes within the Takahashi Meat & Livestock Group, with the exception of slaughtering.

"Zao Wagyu Gem refers to a select group of high-quality Japanese Black cattle, both heifers (never bred females) and steers (castrated males), born and raised on our group farms. These cattle are specifically chosen through rigorous taste testing to ensure their exceptional flavor. We ship approximately 400 heads annually. This is the top-tier, Gem series of Zao Wagyu."

QUEEN, the Zao Wagyu Heifer Series, features an exclusive selection of Japanese Black beef, limited specifically to heifers (never-bred females) raised on the Takahashi Meat & Livestock Group's farms, nestled in the heart of Zao.These heifers are renowned for their exceptional tenderness and distinctive flavor. This carefully curated QUEEN series is specially prepared for customers who prioritize the unique qualities of female cattle.

Grazing

"The Grazing series features select Japanese Black cattle that are mother cows, born and raised on the Takahashi Meat & Livestock Group's farms nestled in the heart of Zao. After giving birth, these cows are raised for over six months through a process of grazing (free-range) and re-fattening. This rich environment nurtures a unique depth of flavor and distinct texture, resulting in a meat quality that truly concentrates their savory essence."
